Root Vegetable Soup

Hiya! How are you guys?

 A few weeks ago I made root vegetable stew it tasted so good! So I thought it would be a good idea to share it with you guys. I've never really been a fan of soup and have never made it! So when I realized how easy it is and how nice it tasted I wondered why I have never made it before! Also the recipe is healthy and filling!






Here is the recipe (4 servings):
2 onions
4 carrots
1 parsnip
1 swede
2 cloves of garlic
500ml chicken/vegetable stock
1 tsp of italian herbs
Coconut oil
Dash of Maggi sauce
Pinch of aromat all purpose seasoning
Pinch of sea salt
Pinch of black pepper
Pinch of curry powder

Method:
Cut the carrots, parsnip and swede into small chunks
Dice the onions and one glove of garlic
Heat the oil to medium heat and throw in the garlic, cook for 1 minute
Throw in the onions and fry until browned
Add all the cut up vegetables into the pot, cook for a further minute
Add the vegetable stock, cover and cook for 5 minutes
Add the clove of garlic and all the herbs and spices. Lower the heat and cook for a further 10-15 minutes or until vegetables are soft.
Take off the cooker and let it cool for 2 minutes
Pour the broth into the blender and blend until desired consistency, I like mine a thick so I blended mine for minute and a half. If you want the soup a bit more thin then add some water and blend some more!

I garnished mine with some chili, but coriander will also do!

I'm tying to still get the hang of photography. Taking photography seriously while trying studying for my final year studies is quite hard. But NO EXCUSES! I have set myself to post twice a week for for weeks! Lets hope I stick to it!
